A Healthier Choice
Buffalo or bison, as it I often called, is lower in cholesterol, fat and calories than skinless chicken. (See the chart below). For heart patients, doctors recommend they eat buffalo as an alternative to other meat. Buffalo is the only animal that has never been detected to have cancer.

Research by Dr. M. Marchello at North Dakota State University has shown that the meat from Buffalo is a highly nutrient dense food because of the proportion of protein, fat, mineral, and fatty acids to its caloric value. Comparisons to other meat sources have also shown that Buffalo has a greater concentration of iron as well as some of the essential fatty acids necessary for human well being.
